Vegetable Pesto Pasta Salad

Savoring the flavors of summer with this vibrant pesto pasta salad!

Ingredients

• 4 Tbsp pesto
• 1/4 cup olive oil
• 1 bunch of asparagus, trimmed and cut into bite sized pieces
• 5 oz baby spinach
• 1 cup peas
• 1 pint cherry tomatoes
• 8 oz Orecchiette pasta
• 1/2 cup shaved Parmesan cheese

Instructions

1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Set aside.
2. Blanch the asparagus, frozen peas, and cherry tomatoes: In the same pot, bring another pot of salted water to a boil. Add the asparagus pieces and cook for about 2 minutes, or until they are crisp-tender. Add the peas and cherry tomatoes. Drain the asparagus and peas, then immediately plunge it into a bowl of ice water to cool.
3. Prepare the pesto: If you haven’t already, prepare your pesto sauce according to your favorite recipe or use a store-bought version.
4. Combine the ingredients: In a large mixing bowl, combine the cooked pasta, blanched asparagus, peas, cherry tomatoes, spinach, olive oil, and and pesto sauce. Toss everything together until well coated with the pesto.
5. Sprinkle with shaved Parmesan cheese. When ready to serve, give it a quick toss and garnish with some fresh basil leaves!
