Green Pea Pasta

This creamy and delicious green pasta is super easy to whip together! Enjoy with the whole family for dinner, or pack up leftovers for the next day.

Ingredients

• 2 cups frozen peas
• 1/4 cup + 1 Tbsp olive oil
• 1/2 cup water
• Salt and pepper to taste
• 1/4 cup basil
• 2 cloves garlic, minced
• 8 ounces of pappardelle pasta
• 1/2 cup grated parmesan
• 1/2 cup pasta cooking water
• 2 chicken breasts, thinly sliced, and grilled
• Crushed red pepper for garnish

Instructions

1. Set a large pot of water to rolling boil. Add a pinch or two of salt. Add peas, and return to boil. Cook peas for 3-5 minutes until tender.
2. Remove peas from pot, and set aside. Return water to boil, and drop in pasta. Cook according to package instructions. Save 1/2 cup of pasta water before straining. Set pasta aside.
3. To a food processor or blender, add peas, basil, olive oil, and 1/2 cup of water and puree to smooth.
4. In a large skillet, heat 1 Tbsp of olive oil, and add minced garlic, and cook for 1-2 minutes to fragrant, then add the pea puree into the pan, and reduce heat to low.
5. Toss in pasta, parmesan, and pasta water.
6. Serve with grilled chicken, more grated parmesan, and crushed red pepper.
