Creamy Butternut Squash Pasta Carbonara

This Creamy Butternut Squash Pasta Carbonara is the perfect weeknight dinner. It will become a staple for you during the fall season!

Ingredients

• 4 slices of bacon, chopped
• 1/2 Tbsp finely chopped fresh sage
• 1/2 small yellow onion, chopped
• 2 cups butternut squash, peeled, seeded and diced into 1/2 inch cubes
• Salt and pepper to taste
• 2 cloves garlic, minced
• 1 cup chicken broth
• 2 Tbsp heavy cream
• 2 cups (8 ounces) of pasta
• 2 Tbsp grated Parmesan cheese, plus more for serving

Instructions

1. Cook bacon in a 12-inch non-stick skillet over medium-high heat until browned and crisp.
2. Remove bacon, leaving 2 Tbsp rendered bacon fat in skillet, then add the sage and onions. Sauté over medium-high heat 2 minutes.
3. Add the butternut squash, season with salt and pepper and cook, tossing occasionally for about 2 minutes.
4. Add in garlic, tossing occasionally for about 2 minutes. Pour in chicken broth and bring to a boil, then reduce heat and to simmer for about 15 minutes.
5. Meanwhile, cook the pasta to al dente in a large pot of salted water according to directions on package. Drain and reserve 1/2 cup pasta water.
6. Let simmered squash mixture cool for a few minutes then transfer mixture to a blender. Blend mixture until smooth. In the reserved skillet, combine pureed squash mixture, chopped bacon, drained pasta, heavy cream, Parmesan cheese, and 1/4 cup reserved pasta water. Mix until well combined.
7. Serve immediately and enjoy.
