Thai Coconut Curry Turkey Meatballs

These Thai Coconut Curry Turkey Meatballs are the ultimate delicious dinner! The creamy and decadent sauce paired with meatballs is so delicious. Serve over your favorite rice, noodles, zucchini noodles, or really, anything you want!

Ingredients

• Thai Turkey Meatballs:
• 1lb organic ground turkey (or sub ground chicken)
• 1 egg
• 1 cup Panko
• 2 cloves garlic, finely minced
• 1 teaspoon ginger, finely minced
• 1.5 tablespoon low-sodium soy sauce
• 1 tablespoon red curry paste
• Salt and black pepper to taste
• Coconut curry:
• 2 tablespoons extra virgin olive oil
• 1 red bell pepper, sliced
• 1 orange bell pepper, sliced
• 1 small onion, diced
• 1 tablespoon red curry paste
• 1 – 13.5 ounce can full-fat coconut milk
• 1 tablespoon low-sodium soy sauce
• Cilantro for garnish

Instructions

1. In a large bowl, combine the ground turkey, egg, Panko, garlic, ginger, soy sauce, red curry paste and salt and pepper and mix well.
2. Add the bowl to fridge to chill for about 15-30 minutes
3. Preheat oven to 400 degrees.
4. Roll turkey mixture into about 1-inch balls and add to baking dish.
5. Bake for 20 minutes.
6. While the meatballs bake, add olive oil to a large skillet. Sauté the peppers and onions over medium heat and cook for about 10 minutes until soft.
7. Add in red curry paste, milk, and soy sauce and stir to combine. Bring to a simmer.
8. Add the cooked meatballs to the coconut curry and simmer for about 30 minutes.
