Spicy Shrimp Tacos with Sriracha Cilantro Sauce

These Spicy Shrimp Tacos with a creamy, sriracha cilantro sauce is a KEEPER. They are fully loaded with flavor, crunch, and color! Don't forget the BEST, secret sauce on top.

Ingredients

• 6 small corn tortillas
• 1 lb raw shrimp, cooked and cubed
• 1 Tbsp olive oil
• 1 Tbsp chili lime seasoning or taco seasoning
• 2 cups red cabbage, thinly sliced
• 1/4 cup low fat sour cream
• 1/2 Tbsp sriracha
• 1/4 cup chopped cilantro
• 2 Tbsp lime juice
• 1 avocado, diced
• 1/3 cup cherry tomatoes, diced
• Cilantro, for garnish

Instructions

1. In a small bowl, combine the low fat sour cream, sriracha, cilantro, and lime juice. Set aside.
2. Thinly slice the red cabbage. Add about a tablespoon of the sriracha cilantro sauce to the red cabbage and mix until well combined.
3. In a medium sized skillet, heat the olive oil. Add the seasoned shrimp and cook for about 2 minutes per side, or until pink. Allow to cool, then cut into small cubes.
4. Dice the avocado and tomatoes.
5. Warm the tortillas in the microwave for about 10 seconds.
6. Assemble the tacos by first adding the red cabbage, then shrimp, then cherry tomatoes, and lastly the avocado. Drizzle with more sriracha cilantro sauce and cilantro.
7. Enjoy!
