Balsamic Flank Steak Salad

This salad is perfect for a weekend night but worthy enough to make for a summer get-together. You can grill the flank steak and onions if you’re feeling extra fancy!

Ingredients

• DRESSING
• 4 cloves garlic, peeled, grated
• 1/2 c. extra-virgin olive oil
• 1/3 c. balsamic vinegar
• 1/2 tsp. granulated sugar
• 1/2 tsp. kosher salt
• 1/4 tsp. freshly ground black pepper
• SALAD
• 1 medium red onion, cut into 1/2" slices
• 1 tsp. extra-virgin olive oil
• Kosher salt
• 1 1/4 lb. flank steak
• Freshly ground black pepper
• 5 oz. lettuce
• 1 c. cherry tomatoes, halved
• 4 oz. blue cheese, crumbled
• Torn fresh basil leaves, for serving

Instructions

1. In a small mason jar or bowl, add all the dressing ingredients. Mix well to combine. Refrigerate until ready to use.
2. Preheat the oven to 500 degrees F. Generously season steak with salt and pepper. Line a sheet pan with aluminum foil. Add the steak to the baking sheet and broil for 4-6 minutes per side. Transfer the steak to a cutting board and rest for 5 minutes. Set aside.
3. On a large platter, arrange lettuce. Top with sliced steak, onions, tomatoes, blue cheese, and basil. Drizzle with dressing before serving.
